Freeze dryers work by using a combination of low temperatures and vacuum pressure to remove water from the material being dried. The process begins by freezing the material at very low temperatures, usually below -40 degrees Celsius, to ensure that the water content is solid. Once frozen, the material is placed in a vacuum chamber and the pressure is reduced, causing the frozen water to sublimate – transition directly from a solid to a gas – without passing through the liquid phase. This sublimation process removes the moisture from the material and leaves behind a dried product that retains its original shape, texture, color, and nutritional content.
One of the key benefits of freeze drying is that it preserves the structural integrity of the material being dried. Unlike traditional drying methods, such as air drying or dehydration, which can cause shrinkage, warping, or loss of nutrients, freeze drying maintains the original shape and quality of the product.
